Mini cremwursti in aluat de covrigi (covridog)/ Pretzel dogs


English translation

Cred ca acesti mini cremwursti in aluat sunt perfecti pentru a fi luati in parc, atunci cand mergi cu copiii (cand o fi sa scapam, in sfarsit, de restrictii) sau ca aperitiv pentru cand ai musafiri. Desi, in al doilea caz, poate ar fi mai bine sa nu folositi si seminte de mac, vazand incapatanarea lor de a-ti ramane intre dinti 😅.

Am spus “mini” cremwursti, pentru ca am folosit jumatati de cremwursti. Puteti, normal, sa ii faceti mai lungi, dar tineti cont de cantitatea de aluat de care veti avea nevoie. Daca va plac mult covrigii facuti in casa, incercati si aceste Chifle-covrigi.

Ingrediente (18 buc.):

  • 500 g faina 000
  • 350 ml apa calda
  • 50 g bicarbonat de sodiu
  • 1 lingurita zahar
  • 5 g drojdie uscata/15 g dr.proaspata
  • 1 lingurita sare
  • 9 cremwursti lungi, taiati in doua
  • seminte de susan si mac, sare mare
  • 1 ou, pentru uns (optional)

Preparare

Intr-un bol mai mare, amestecati drojdia, zaharul si apa calda. Daca folositi drojdie proaspata, o dizolvati bine in apa, apoi lasati deoparte pentru circa 10 minute, pana se umfla. Puneti jumatate din faina, amestecati, apoi sarea si restul de faina si omogenizati. Framantati pentru 2-3 minute, pana incepe sa se lege bine aluatul.

Acoperiti si lasati 30 de minute la crescut, la o temperatura calduta. Aprindeti de pe acum si cuptorul la 220°C/ treapta 7. Dupa cele 30 de minute, puneti la fiert o oala mai mare cu apa (2-3 litri), iar cand incepe sa clocoteasca, varsati inauntru bicarbonatul de sodiu. Va face spuma la inceput, dar va disparea in cateva secunde.

Aluatul se pune pe blatul usor infainat si se imparte in 18 bucatele cat mai egale. Fiecare bucatica de aluat se intinde in cate o fasie, lunga de doua ori lungimea cremwurstiului. Fiecare fasie se infasoara in jurul acestuia, sigiland usor capetele. Se fierb cate 1 minut in apa cu bicarbonat, apoi se scot cu spumarul si se pun in tava tapetata cu hartie de copt.

Se ung cu ou batut si amestecat cu putina apa, apoi se presara cu sare mare, susan si mac. Se coc 11-13 minute, pana cand devin aurii. In loc de ou, ii puteti unge cu putin lapte.

Pretzel dogs

I think that these mini pretzel dogs are perfect to be taken in the park, when you go with your kids (when the restrictions will finally be over) or as an appetizer for when you have guests. Although, in the second case, it may be better not to use poppy seeds, seeing their stubbornness to stick between your teeth 😅.

I said “mini” pretzel dogs, because I cut the hotdogs in two. Of course, you can make them longer, but keep in mind the amount of dough you will need. If you really like homemade pretzels, also try these Pretzel buns.

Ingredients (18 pcs.):

  • 4 cups 2 Tbsp all purpose flour
  • 1 1/2 cups warm water
  • 1/4 cups baking soda
  • 1 tsp sugar
  • 0,2 oz dry yeast/0,5 fresh yeast
  • 1 tsp salt
  • 9 hotdogs, cut in halfes
  • kosher salt, sesame and poppy seeds
  • 1 egg (for brushing)

Method

In a larger bowl, mix the yeast, sugar and warm water. If you use fresh yeast, dissolve it well in water, then set aside for about 10 minutes, until it swells. Put half of the flour, mix, then salt and the rest of the flour and mix well. Knead for 2-3 minutes, until the dough comes together.

Cover and let rise for 30 minutes at a warm temperature. Turn on the oven at 425°/gas mark 9. After the 30 minutes, bring to boil a larger pot with water (about 100 oz) then add in the baking soda. It will foam at first, but will disappear in a few seconds. Place the dough on a lightly floured surface and divide it into 18 somewhat equal pieces.

Roll each piece into a strip, twice the lengh of the sausage and wrap it around it, pinching the ends onto themselves to prevent them unwrapping.One by one place the place the pretzel dogs into the boiling soda water for about 1 minute. Using a large slotted spoon or spatula remove them from the water and place onto the prepared baking sheet.

Brush with beaten egg yolk and water mixture and sprinkle with kosher salt, sesame and poppy. Bake for 11-13 minutes, until golden brown.
