Briose Oreo/ Oreo buttercream chocolate cupcakes

Delicioase briose cu cacao, ornate cu crema mea preferata, crema de unt. Dar, de aceasta data, amestecata cu un praf de biscuiti Oreo. Crema de unt este foarte simplu de facut, dar se si taie la fel de simplu, daca untul nu are temperatura care trebuie. Gasiti aici cam tot ce trebuie sa stiti despre crema de unt. In cazul brioselor, nu inlocuiti bicarbonatul de sodiu cu praful de copt, pentru ca nu vor mai creste. Atunci cand folosesti lapte sau iaurt, bicarbonatul de sodiu este cel care ajuta un preparat sa creasca.


Ingrediente briose (15-16 briose):

  • 50 g cacao
  • 230 ml lapte cald spre fierbinte
  • 100 g unt topit/margarina prajituri
  • 50 ml ulei
  • 230 g zahar
  • 2 oua
  • 190 g faina 000
  • 1 lingurita bicarbonat de sodiu
  • 2 pliculete zahar vanilat (16g)
  • 1/3 lingurita sare
  • 8 biscuiti Oreo (pentru decor)

Ingrediente crema:

  • 200 g unt/margarina prajitura (80% grasime), la temperatura camerei
  • 250 g zahar pudra
  • 1 lingura lapte la temperatura camerei
  • 1 fiola esenta vanilie
  • 9 biscuiti Oreo sfaramati fin

Briosele

Se aprinde cuptorul la 170°C/338°F/treapta 3 spre 4 si se pregateste tava pentru briose. Se amesteca cacaoa si bicarbonatul de sodiu; se adauga laptele si se omogenizeaza.

Separat, se amesteca untul topit si usor racit, uleiul, zaharul si sarea. Se pun si ouale si omogenizeaza cu ajutorul unui tel. Puneti amestecul de cacao peste cel de oua, omogenizati bine, apoi adaugati faina cernuta si o incorporati cu telul. Umpleti formele de briose, nu pana sus, ci cam 2/3 apoi dati la cuptor pentru 17-18 minute.

Crema Oreo

Mixati untul moale la viteza medie, pentru 1 minut, pana devine cremos. Adaugati zaharul, mixati, iar apoi laptele si continuati mixarea pentru inca 2-3 minute, pana ce totul este foarte bine omogenizat si cremos. Puneti esenta de vanilie, mixati scurt, iar la sfarsit incorporati biscuitii pisati fin, punandu-i in 2-3 etape.

Dati la frigider, acoperita, pana ce briosele se racesc complet, apoi le decorati cu ajutorul posului. Deasupra fiecarei briose se aseaza cate o jumatate de biscuite Oreo. Inainte de a fi servite, va recomand ca si briosele sa fie tinute 30 de minute – o ora la frigider, deoarece sunt si mai bune odata ce se reintareste untul din ele.

Oreo buttercream chocolate cupcakes

Delicious chocolate cupcakes frosted with my favourite frosting, the buttercream. But not a simple buttercream, an Oreo powder buttercream.

Cupcakes ingredients (15-16 pcs):

  • 1/2 cup dutch cocoa powder
  • 1 cup hot milk
  • 2/5 cup butter, melted
  • 1/5 cup vegetable oil
  • 1 1/4 granulated sugar
  • 2 eggs
  • 1 4/5 cups all purpose flour
  • 1 tsp baking soda
  • 1/3 tsp salt
  • 8-9 Oreos for decorating

Oreo buttercream:

  • 4/5 butter, room temperature
  • 1 1/4 cups powdered sugar
  • 1 tsp lemon extract
  • 9 finely crushed Oreos

Making the cupcakes

Preheat the oven at 338°F/gas mark 3 to 4 and line a muffin pan with cupcake liners. Whisk cocoa powder and baking soda, then add the hot milk and combine.

In a separate bowl whisk the melted and cooled butter, oil, sugar and salt. Add the eggs and combine. Pour the cocoa mixture over the eggs mixture and whisk until combined. Sift in the flour and stirr until well incorporated. Pour the batter into the liners and fill 2/3. Bake for 17-18 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely, on a wire rack, before frosting.

Oreo buttercream

Mix the soft butter at medium speed for 1 minute, until creamy. Add the sugar, mix, and then the milk. Continue mixing for another 2-3 minutes, until everything is very well blended and creamy. Put the vanilla extract, mix shortly. At the end incorporate the finely ground biscuits, putting them in 2-3 steps.

Keep in the refrigerator, airtight, until the cupcakes cool completely. Frost the cupcakes and add half Oreo on top of each of them. Before serving, I recommend to keep the cupcakes in the fridge for 30 minutes – one hour. They taste even better once the butter inside hardenes.
