Blat simplu pentru pizza/Easy homemade pizza dough

Probabil cam fiecare dintre noi avem deja o reteta de blat pe care o folosim ori de cate ori facem pizza. Aceasta este reteta mea pentru blatul de pizza simplu. Spun simplu, pentru ca mai sunt mult alte tipuri de pizza, cum ar fi pizza dubla sau pizza cu blat din cartofi. Toppingul si-l alege fiecare dupa preferinte, insa va sugerez ca in cazul branzei mozzarella, sa o folositi pe cea speciala pentru pizza, deoarece nu contine atat de mult lichid si nu “uda” blatul in timpul coacerii.

Daca nu aveti prea mult timp sau chef la dispozitie pentru a pregati un sos, inainte de a presara toppingul, ungeti blatul cu sos de rosii. Nu recomand ketchup-ul, deoarece isi modifica gustul in timpul coacerii, intr-un mod destul de neplacut. Folositi cu incredere sosul de rosii. Dar, daca vreti o pizza cu adevarat gustoasa, folositi un sos pentru pizza facut in casa. Veti vedea, face diferenta.


Ingrediente (1 tava de cuptor):

  • 400 g faina 000
  • 240 ml apa calduta
  • 3 linguri ulei
  • 7 g drojdie uscata/20 g dr.proaspata
  • 1 lingurita zahar
  • 1 lingurita sare

Ingrediente topping:

  • 60-70 g masline feliate
  • 200 g branza mozzarella
  • feliute prosciutto/salam
  • 5-6 linguri sos pizza/sos de rosii

Preparare
Primul lucru pe care trebuie sa il faceti este sa aprindeti cuptorul la 240°C/treapta 9. Pizza se coace maxim 15 minute, la temperatura mare, iar cuptorul este esential sa fie deja incins cand bagi pizza.
Intr-un bol/castron incapator se topeste drojdia proaspata in apa calduta. Se pune si zaharul, se amesteca cu o lingura de lemn si se lasa 10 minute deoparte, pana se umfla. Daca folositi drojdie uscata, sariti peste cele 10 minute si treceti direct la pasul urmator.

Se pune apoi uleiul si jumatate din cantitatea de faina si se amesteca cu lingura de lemn. Adaugati sarea si restul de faina si framantati aluatul pana incepe sa se dezlipeasca de peretii castronului. Acoperiti cu o folie de plastic sau prosop de bucatarie si lasati la dospit pentru 30 minute, la o temperatura calduta. Intre timp, pregatiti topping-ul.

Dupa ce a dospit, intindeti foaie din aluat. Fie cu sucitorul, pe blatul usor infarinat, fie pe hartia de copt si mutat apoi cu totul in tava, fie, asa cum fac si eu, intindeti foaia cu mainile unse cu ulei, direct in tava. Ungeti cu pasta de tomate sau sosul de rosii, apoi presarati topping-ul. Dati la cuptorul preincins la 240°C, pentru 13-15 minute.


Easy homemade pizza dough

Most of us probably already have a pizza dough recipe that we use everytime we make pizza. This is my simple pizza dough recipe. And I say simple, because there are lots of other pizza dough types. Like Double crust pizza or potatoe crust pizza. Obviously, everyone choses his favourite topping, but, when it comes to mozzarella cheese, I suggest you choose a low moisture one so it doesn’t soak into the dough while baking. In Europe there is a type of mozzarella especially made for pizza.

If you don’t have enough time or you just don’t feel like making a pizza sauce, just brush the pizza with can tomato sauce. It works great too. I strongly advise you not to brush with ketchup, because it changes its taste while baking in a pretty unpleasant way. Just use tomato sauce. But, if you want a really yummy pizza, make your own homemade pizza sauce. It works like magic!


Ingredients (1 sheet pan):

  • 3 1/3 cup all purpose flour
  • 1 cup warm water
  • 3 Tbsp olive oil
  • tsp dry yeast/
  • 1 tsp sugar
  • 1 tsp salt


Topping:

  • about 1/2 cups sliced olives
  • 7 oz mozzarella cheese
  • prosciutto/salame slices
  • 5-6 Tbsp tomato/pizza sauce

Method

The first thing you need to do is preheat the oven to 475°F/ gas mark 9. The pizza bakes for 14-15 minutes and is very important that the oven already has the temperature at which the pizza will bake.

In a larger bowl whisk together the warm water, yeast, and granulated sugar. Cover and allow to rest for 10 minutes. If you use dry yeast, skip the 10 minutes and go to the next step.

Add the oil and half the flour and mix with a wooden spoon. Add salt and the rest of the flour and knead until the dough pulls away from the sides of the bowl (2-3 min). Poke it with your finger – if it slowly bounces back, your dough is ready to rise. If not, keep kneading. Lightly grease a large bowl with oil or nonstick spray– just use the same bowl you used for the dough. Place the dough in the bowl, turning it to coat all sides in the oil. Cover and allow to rise for 30 minutes at a warm temperature. Meanwhile, prepare the topping.
On a lightly floured work surface using lightly floured hands or rolling pin, gently flatten the dough into discs or baking sheet. Brush with tomato or homemade pizza sauce and bake for 14-15 minutes.
